Chef Brian Tsao and Uncle Roger, My New Favorites.
I was on You Tube watching my usual folks when I stumbled across Uncle Roger. Uncle Roger is a Malaysian comedian who reviews people’s versions of traditional Asian dishes. The video that caught my eye was one done by Rachel Ray. I’d seen someone review one of her how to videos on making Pozole and it was not very good so when I saw Uncle Roger reviewing her version of Pad Thai, I had to watch and I was addicted.
The review didn’t go well at all and from there, I started watching other videos he’d done. Many did not go well for the instructor but he was there saying when someone did things correctly. He is very good at telling how certain things should be done. An example is Thai Green Curry paste. In one video, the chef put all the ingredients in a food processor and whizzed them into small pieces. Uncle Roger was going crazy talking about how it needed to be pounded in a pestle and mortar until it was a paste. He also discussed how the paste needs to be cooked with some sort of fat to bring out the proper flavors.
I did not want to go to bed last night due to how funny his reviews are and how educational. While watching one video of his, I came across a review of Uncle Roger’s review of a special fried rice done by Chef Brian Tsao. Chef Brian Tsao is a real chef with 17 years experience. He has been on Chopped (he didn’t win) and beat Bobby Flay (he did win).
So we have Chef Brian Tsao reviewing both Uncle Roger and the original video. I’m not sure what was made the fried rice special other than the home cook burned the garlic, used raw rice, overcooked the peas, and managed not to poison the person who ate it. Then I had to watch another and another of Chef Brian Tsao watching Uncle Roger’s review.
So far on the videos I’ve watch, Chef Brian agrees with what Uncle Roger says but he takes time to explain from a culinary point of view why certain things are done or not done and also explains a bit more in detail. It was fun watching both of them react to a chef’s fried rice video in which he used prepacked precooked rice and chili jam with some water thrown in.
The two together are dynamite and if you get the chance, check them out because you’ll be laughing and you will learn so much. I absolutely will continue watching both of them, especially when I’m having a bad day and just need something funny to change my attitude.
